Warrior Princess Pasta Salad
Ingredients
- 1 package (8 ounces) pad Thai brown rice noodles
- 2 tablespoons less-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1¼ teaspoons honey
- 1/8 teaspoon kosher salt
- ½ (15-ounce) can baby corn, drained and rinsed
- 1 DOLE® Carrot, peeled and thinly shaved with vegetable peeler
- 1 medium red bell pepper, cut into 2-inch-thick slices
- 1 cup small DOLE® Broccoli florets
- 1 cup snow peas, halved crosswise
- Mandarin oranges and/or chopped nuts such as almonds or cashews (optional)
- 2 DOLE® Green Onions, thinly sliced
Directions
- Prepare noodles as label directs; drain and transfer to large bowl.
- Whisk soy sauce, vinegar, oil, honey and salt in a small bowl. Add half the soy sauce mixture to hot noodles and toss. Cool noodle mixture completely.
- Add corn, carrot, pepper, broccoli, peas, oranges and/or nuts, if desired, and remaining half of the soy sauce mixture to the noodles and toss. Makes about 8 cups.
- Serve salad sprinkled with onions.
