Warm Sweet Potato Salad with Kale & Cranberries
Ingredients
- 1 bag (13.6 ounces) DOLE® Chopped Sunflower Crunch Kit™
- 2 cups loosely packed cups baby kale
- 1/3 cup no-sugar-added dried cranberries
- Crumbled fat free feta cheese (optional)
- 2 tablespoons olive oil
- 1 large DOLE® Sweet Potato, peeled and cut into 1/2-inch cubes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon apple cider vinegar
Directions
- Prepare Chopped Kit as package directs in a large bowl. Add kale, cranberries and cheese, if desired; toss.
- Heat oil in a large skillet over medium-high heat. Add sweet potato, salt and pepper; cook 5 minutes or until browned, stirring occasionally. Add vinegar and ¼ cup water; cover and cook 3 minutes or until liquid evaporates and potatoes are tender. Add potato mixture to salad; toss and season with salt and pepper to taste. Makes about 5 cups.
