Vegan Gyro
Ingredients
- 1 garlic clove, minced
- ½ DOLE® Lemon, juiced (about 2 tablespoons)
- ⅓ cup plain dairy free soy yogurt alternative
- ¼ cup grated English cucumber
- 1 teaspoon chopped fresh dill
- ½ teaspoon dried oregano
- 2 tablespoon olive oil
- 2 packages (8 ounces each) traditional seitan slices
- 4 loaves whole wheat pita
- 2 Roma tomatoes, chopped
- ¼ small DOLE® Red Onion, thinly sliced
- 2 cups loosely packed DOLE® Spring Mix
Directions
- Whisk garlic, lemon juice, yogurt, cucumber, dill and oregano in a small bowl. Makes about ½ cup.
- Heat oil 1 tablespoon oil in a large nonstick skillet over medium heat; add 1 package seitan and cook 5 minutes or until browned, stirring frequently. Repeat with remaining 1 tablespoon oil and 1 package seitan.
- Stack pitas between 2 damp paper towels on a microwave-safe plate; microwave on high 30 seconds or until warm. Serve seitan in pitas topped with tomatoes, onion, spring mix and cucumber mixture.
