Tropi-Grill Salad
Ingredients
- 1/2 pound medium shrimp, peeled
- 4 wooden skewers, soaked in water for 30 minutes
- Juice of 1/2 lemon
- 1 tablespoon olive oil
- 1/2 fresh DOLE® Tropical Gold® Pineapple, peeled and cut into four 1-inch thick slices
- 2 DOLE® Romaine Hearts, halved lengthwise
- Olive oil spray
- 4 tablespoons fat-free Thousand Island dressing
- 2 small avocados, peeled, pitted, and sliced
Directions
- Thread shrimp onto each skewer.
- Combine lemon juice and oil in a small bowl. Brush mixture over the shrimp.
- Spray grill with olive oil spray. Grill shrimp skewers and pineapple over medium-high heat for 3 minutes on each side or until the shrimp is cooked through and the pineapple slices are charred.
- Spray lettuce lightly with olive oil spray and place cut side down on grill. Cook for 2 minutes or until golden brown.
- Remove shrimp, pineapple and lettuce from grill. Remove shrimp from skewers and chop the pineapple into chunks. Set aside.
- Place lettuce onto large platter and drizzle with dressing. Top with shrimp, pineapple and slices of avocado.
