Summer Cobb Salad
Ingredients
- 6 slices turkey bacon, chopped
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 package (11.3 ounces) DOLE® Chopped Avocado Ranch Salad Kit™
- 2 refrigerated hard-cooked eggs, chopped
- 1 DOLE® Avocado, peeled, pitted and chopped
- 1 cup halved cherry tomatoes
Directions
- Prepare outdoor grill for direct grilling over medium-high heat. Cook bacon in a large skillet over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to a paper towel-lined plate.
- Brush chicken with oil; sprinkle with salt and pepper. Place chicken on hot grill rack; cover and cook 10 minutes or until internal temperature reaches 165°F. Transfer chicken to a cutting board; cut into 1-inch pieces.
- Prepare Chopped Kit as package directs in a large bowl; fold in eggs, avocado, tomatoes and chicken. Makes about 8 cups.
- Serve salad sprinkled with bacon.
