Southwest Cauliflower-White Bean Burger
Ingredients
- 1/2 small head DOLE® Cauliflower, cut into florets
- 1 can (15 ounce) reduced sodium cannellini beans, drained and rinsed
- 2 DOLE® Green Onions, thinly sliced
- 2 garlic cloves, minced
- 1/2 cup old-fashioned rolled oats
- 1/3 cup frozen corn, thawed
- 1/4 cup drained chopped roasted red peppers
- 1/4 cup roasted unsalted pepitas
- 1 tablespoon less-sodium taco seasoning
- 1/2 teaspoon kosher salt
- Nonstick cooking spray
- 4 100% whole wheat hamburger buns, split
- 1 package (12 ounces) DOLE® Chopped Chipotle & Cheddar Kit ™
Directions
- Prepare outdoor grill for direct grilling over medium heat. Pulse cauliflower in a food processor until small pieces remain; transfer to a large bowl. Add beans; mash with the back of a fork until well blended. Fold in onions, garlic, oats, corn, peppers, pepitas, seasoning and salt; form into 4 (½-inch-thick) patties.
- Spray patties with nonstick cooking spray and place on hot grill rack; cover and cook 15 minutes or until browned, turning once. During last minute of cooking, place buns, cut side down, on grill rack; cook 1 minute or until lightly toasted.
- Prepare Chopped Kit as package directs in a large bowl.
- Serve burgers in buns topped with Chopped Kit.
