Raspberry Almond Granola Bars
So handy! Granola bars make a tasty snack in between meals. But the store-bought varieties often contain a lot of sugar and are usually packed in plastic. How about making your own bars? Our delicious raspberry and almond bars, made with raspberries, rolled oats, almonds, honey, puffed rice and pumpkin seeds, are quick to make and have what it takes to become your favorite food!
Ingredients
- 1 ½ cups rolled oats
- ½ tsp Cinnamon
- ½ cup chopped almonds
- 1 cup puffed rice
- ½ cup roasted, unsalted pumpkin seeds
- ½ cup honey
- 1 tsp vanilla extract
- 1 cup raspberries
- ¼ tsp kosher salt
- ¼ cup whole roasted almonds
Directions
Toast the rolled oats in a dry pan until you can smell them cooking. Add the cinnamon, chopped almonds, purred rice and pumpkin seeds; heat briefly and remove the pan from heat.
Heat the honey, vanilla, raspberries and salt in a small saucepan and cook for approx. 5 minutes. Add the rolled oats and combine to form a sticky mixture.
Line a sheet pan with parchment paper. Pour in the oat mixture. Place whole almonds on top and smooth down the surface. Place in the fridge to set and leave for 30 minutes or overnight.
To finish, turn the mixture out of the pan and cut into 1 inch-wide bars using a serrated knife.
