Protein-Packed Savory Oatmeal
Ingredients
- 2 teaspoons olive oil
- 2 slices plant-based bacon, chopped
- ¼ cup thinly sliced DOLE® Mushrooms
- 1 cup packed DOLE® Baby Spinach
- 1 large egg
- 1 large egg white
- ½ cup gluten free old-fashioned rolled oats
- ¾ cup unsweetened almond milk
- 2 teaspoons grated Parmesan cheese
- ½ teaspoon everything seasoning
Directions
- Heat 1 teaspoon oil in a large skillet over medium heat. Add bacon and mushrooms; cook 6 minutes or until mushrooms are tender, stirring occasionally. Add spinach; cook 1 minute or until wilted, stirring occasionally. Transfer to a small bowl; cover to keep warm.
- Heat remaining 1 teaspoon oil in same skillet over medium heat. Add egg; cover and cook 3 minutes or until egg white is cooked through and yolk is slightly soft.
- Stir egg white, oats and milk in a microwave-safe bowl; microwave on high 2 minutes or until softened. Makes about 1 cup.
- Serve oatmeal topped with bacon mixture, egg, cheese and seasoning.
