Mediterranean Vegetable Tart
The Mediterranean diet has long been touted as one of the most delicious—and healthy—on the planet. This whole wheat tart is no exception. With its colorful blend of over 20 different vegetables and lettuces layered in a base of deliciously aromatic baba ganoush, you’re sure to taste why.
Ingredients
- 1 (10-inch) prepared 100% whole-grain tart crust, cooked according to instructions on package
- 4 oz. baba ganoush
- 2 cups quartered, canned artichoke hearts, drained on paper towels
- 1 cup cherry tomatoes, cut into quarters
- 1/2 cup DOLE® Shredded Carrots
- 1 medium yellow bell pepper, seeded and cut into 1-inch pieces
- 1 medium zucchini, cut into 1/4-inch thick slices
- 1 large roasted red pepper (from a 12-oz. jar), drained and cut into 1-inch pieces
- Salt and freshly ground pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 pkg. (5 oz.) DOLE 50/50 Salad Blend
- 1 small lemon, zest removed and reserved, then juiced, reserving juice
- 3 tablespoons olive oil
Directions
- Spread the baba ganoush evenly over the tart crust.
- Begin building the tart with the vegetables by placing the artichoke hearts around the border of the crust. Continue layering the vegetables and pressing them into the baba ganoush: First the tomatoes, carrots, yellow pepper, zucchini and roasted red peppers, seasoning each layer lightly with salt and pepper, as desired. Top with Parmesan cheese.
- Toss together salad blend, lemon zest, lemon juice and olive oil in a large bowl. Season lightly with salt and pepper. Spoon one cup of salad onto the center of the tart. Serve the remaining salad in 6 small bowls.
Tips & tricks
Hummus is a perfect alternative to baba ganoush, due to its similar consistency and flavor. Feel free to swap in your favorite flavor of hummus, from original, to garlic and pine nut, to roasted red pepper.
