Maple, Apple and Cheddar Salad

Ingredients
- 1 pkg (5 oz) DOLE® 50/50 Salad Blend
- 1 tart apple, cored and thinly sliced
- 1/2 cup dried apple slices
- 1/4 cup grated sharp Cheddar cheese
- 1/4 cup pistachios, chopped
- 2 tablespoons Maple Vinaigrette (recipe below)
- salt and ground black pepper, to taste
Directions
- Combine salad blend, apple slices, dried apples, cheese and pistachios in large bowl. Toss with Maple Vinaigrette, until coated as desired. Season with salt and pepper, to taste.
Maple Vinaigrette: Whisk together 2 tablespoons finely minced shallot, 1/4 cup apple cider vinegar, 3 tablespoons pure maple syrup, 2 tablespoons canola oil, 1 teaspoon Dijon mustard, a pinch of crushed red pepper flakes and salt. Makes about 1/2 cup.
