Kale and Cabbage Slaw
Easy to make ahead of time, this new spin on slaw adds pumpkin seeds and hemp seeds to DOLE® Chopped Sunflower Crunch Kit for a diverse texture. The naturally crunchy salad is the perfect base for softer veggies—yellow squash and shaved Brussels sprouts. But sliced strawberries are the secret hero here, adding sweetness and complexity that will have people begging for more.
Ingredients
- 1 pkg. DOLE® Chopped Sunflower Crunch Kit
- 2 cups thinly sliced yellow squash
- 1/2 pound DOLE® Brussels Sprouts, trimmed, halved, and sliced
- 1/2 cup thinly sliced DOLE® Red Onion
- 1/4 cup chopped fresh parsley
- 2 cups sliced DOLE® Strawberries
- 1/8 cup hemp seeds or crushed flax seeds
- 1/8 cup pumpkin seeds
Directions
- Combine salad blend, bacon, and sunflower seeds from salad kit with yellow squash, Brussels sprouts, red onion, and parsley.
- Add Sweet Onion & Citrus dressing from salad kit and toss to combine. Top with strawberries and spoon into serving bowl. Top with hemp seeds and pumpkin seeds.
Tips & tricks
Sprinkle the hemp seeds and pumpkin seeds just prior to serving for a nice crunch.
