Grilled Tropical Split
Ingredients
- 3 DOLE® Bananas, 2 peeled & frozen, 1 peeled
- 8 chunks fresh DOLE Tropical Gold® Pineapple
- 2 peaches, pitted and quartered
- Olive Oil Spray
- 1 teaspoon ground cinnamon
- 1 cup Fresh Berry Sauce (see recipe below)
- 2 tablespoons chopped toasted almonds
- 4 mint sprigs
Directions
- Press the two frozen bananas through Yonanas® machine into a cup. If you don’t have a Yonanas machine; peel, slice and freeze bananas for 2 hours. Place frozen banana slices in food processor or blender. Cover; blend until bananas become a smooth custard. Keep in the freezer until ready to serve.
- Preheat grill or broiler to high.

Cut remaining banana into eight pieces. Alternately thread banana, pineapple and peach wedges onto skewers. Spray fruit with olive oil spray and season with cinnamon. Grill on all sides or until fruit is softened and light brown around edges.
- Arrange skewers on serving plates with a scoop of the frozen banana, a spoonful of Fresh Berry Sauce, a sprinkling of almonds and mint.
Fresh Berry Sauce: In a saucepan, combine 1/2 cup quartered DOLE® Strawberries, 1/4 cup DOLE Blueberries and 1/4 cup DOLE Blackberries with 2 tablespoons water and 1 tablespoon honey. Warm the berries until they soften. Remove from heat and add 1/4 cup DOLE Raspberries. Set aside until ready to use.
