Grape & Pomegranate Parfaits
Ingredients
- 1/3 cup pomegranate juice
- 2 1/2 tablespoons honey
- 1 cup halved DOLE® Red Grapes
- 2 cups frozen vanilla low fat yogurt
- 1/2 cup coconut whipped topping
- 1/4 cup chopped roasted and lightly salted pistachios
- 2 tablespoons pomegranate arils
Directions
- Whisk pomegranate juice and honey in a small saucepot; heat over medium-low heat 5 minutes or until slightly thickened, stirring frequently. Transfer juice mixture to a medium bowl; stir in grapes. Makes about 1 cup.
- Add 2 tablespoons grape mixture to bottom of 4 (10-ounce) parfait dishes; top with yogurt and remaining ½ cup grape mixture. Freeze parfaits at least 2 or up to 4 hours.
- Serve parfaits topped with whipped topping, pistachios and pomegranate arils.
