Curried Pasta Salad
Ingredients
- 4 ounces uncooked bowtie or corkscrew (fusilli) pasta
- 1 cup DOLE® Tropical Gold® Pineapple, cut in chunks
- 3 tablespoons DOLE® Pineapple Juice
- 1/2 cup fat free or reduced fat mayonnaise
- 2 teaspoons packed brown sugar
- 1 teaspoon curry powder
- 1 can (11 to 15 oz.) DOLE® Mandarin Oranges, drained
- 1-1/2 cups cooked chicken breast or turkey breast, chopped
- 1/2 cup sliced DOLE® Celery
- 1/4 cup chopped DOLE® Green Onions
Directions
- Cook pasta as package directs; drain.
- Stir together juice, mayonnaise, sugar and curry in large serving bowl.
- Add pasta, pineapple chunks, mandarin oranges, chicken, celery and green onions to curry dressing; toss to evenly coat. Serve on lettuce-lined plate and garnish with shredded red cabbage, if desired.
