Cocoa Raspberry Banana Mug Cake
Ingredients
- 1 overripe large DOLE® Banana
- 1/4 cup almond butter
- 1 large egg
- 4 teaspoons maple syrup
- 3 tablespoons cocoa powder
- Vanilla low-fat Greek yogurt (optional)
- DOLE Raspberries (optional)
Directions
- Mash banana in medium bowl with a fork. Add almond butter and egg until well blended. Stir in maple syrup and cocoa until blended and smooth.
- Divide batter between 2 microwave-safe mugs. Microwave each mug on HIGH 1 to 2 minutes or until firm and has risen. Garnish with a dollop of yogurt and raspberries, if desired or your favorite toppings.
Tips & tricks
For a fun variation, add 1/2 DOLE Banana, cut into slices into batter before microwaving OR add 2 tablespoons semi-sweet chocolate chips to batter before microwaving.
