Blueberry, Almond & Chocolate Baked Oatmeal
Ingredients
- Nonstick cooking spray
- 2 cups whole rolled oats
- 1 cup sliced almonds
- ¼ cup light brown sugar
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 2 large eggs
- 2 large ripe DOLE® Bananas, mashed
- 1½ cups oat milk
- 1½ cups DOLE® Blueberries
- ½ cup gluten free dark chocolate baking chunks
Directions
- Preheat oven to 350°F. Spray an 8-inch square baking dish with nonstick cooking spray. Toss oats, ½ cup almonds, sugar, baking powder and salt in a large bowl. Whisk eggs in a medium bowl; whisk in bananas and milk. Stir egg mixture into oat mixture; fold in ¾ cup blueberries and ¼ cup chocolate chunks.
- Spread oat mixture in prepared dish; top with remaining ½ cup almonds and ¾ cup blueberries, and ¼ cup chocolate chunks. Bake 50 minutes or until top is golden brown and crisp. Let stand 15 minutes before serving. Makes about 6 cups.
