Birthday Pudding Mug Cake
Ingredients
1 small spotted DOLE® Banana, peeled and mashed (about 4 ounce peeled)1 large egg
3 tablespoons self-rising flour
2 tablespoons unsweetened almond milk
1 tablespoon soy free natural buttery spread with olive oil, melted
1 teaspoon raw cane sugar
¼ teaspoon vanilla extract
1 teaspoon rainbow sprinkles
Light vanilla ice cream, caramel sauce and/or chopped strawberries for serving (optional)
Directions
- Mash banana with a fork in a small bowl; whisk in egg, flour, milk, buttery spread, sugar and vanilla extract; pour into a 16-ounce microwave-safe mug and quickly fold in ½ teaspoon sprinkles. Sprinkle batter with remaining ½ teaspoon sprinkles.
- Heat mug in microwave oven on high 1 minute 30 seconds or until set and internal temperature reaches 160°F; serve warm topped with ice cream, caramel sauce and/or strawberries, if desired.
