BBQ Shrimp Salad
Ingredients
- 2 teaspoons olive oil
- 1/2 lb. raw shrimp, cleaned
- 2 garlic cloves, minced
- 1/4 cup orange juice
- 1 pkg. (8.9 oz.) DOLE® Southwest Salad Kit
- 1/2 cup canned black beans, rinsed
- 2 fresh cooked ears corn, kernels cut off
- 1/3 cup chopped fresh cilantro
Directions
- Heat oil over medium-high heat in large skillet, cook shrimp and garlic, 6 minutes or until shrimp is pink. Stir in orange juice and continue cooking until liquid is reduced.
- Pour salad kit ingredients into bowl and toss together. Stir in black beans, corn and cilantro, until evenly coat. Spoon salad onto serving platter top with shrimp.
