Bananas Foster Upside-Down Cake
Ingredients
- Nonstick cooking spray
- 3 tablespoons buttery spread
- ¼ cup light brown sugar
- 2 DOLE® Bananas, peeled, halved crosswise, then halved lengthwise
- ¼ cup chopped pecans
- 2 large eggs
- 2/3 cup unsweetened applesauce
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/3 cup white whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
Directions
- Preheat oven to 350°F. Spray 8-inch square baking dish with nonstick cooking spray.
- Melt buttery spread in a medium skillet over medium-high heat; whisk in brown sugar and heat to a simmer. Simmer 2 minutes, whisking frequently; spread in bottom of prepared dish. Place bananas, cut side down, over butter mixture; sprinkle with pecans.
- Whisk egg, applesauce, granulated sugar, and vanilla extract in a large bowl. Whisk flours, baking powder, and cinnamon in a medium bowl; whisk into egg mixture until incorporated. Transfer to prepared dish.
- Bake 25 minutes or until toothpick inserted in center comes out clean; cool in pan on wire rack 10 minutes. Run a knife around edge of cake to loosen; invert onto serving platter. Drizzle cake with any remaining liquid in the dish; cut into 8 pieces.
