Banana Bread Batter Pudding
Ingredients
- 2 whole pitted dates
- ⅓ cup refrigerated unsweetened coconut milk
- 2 ripe DOLE® Bananas, peeled
- ¼ cup drained and rinsed white beans
- 2 tablespoons oatmeal baby cereal
- ¼ teaspoon ground cinnamon
Directions
1. Purée dates and milk in a blender on high until smooth. Add bananas, beans, cereal and cinnamon to blender; purée on high until smooth. Makes about 1½ cups.
2. Divide pudding into 4 (4-ounce) glass jars with lids. Serve immediately or seal jars and refrigerate up to 3 days.
