Air Fryer Chicken Thighs & Veggies with Feta Yogurt
Ingredients
- 1 package (21.1 ounces) DOLE® Homestyle Roasted Herb Sheet Pan Meal Kit
- 1 medium red bell pepper, chopped
- 1 small DOLE® Onion, chopped
- 3 tablespoons olive oil
- 4 boneless, skinless chicken thighs (about 5 ounces each)
- 2 garlic cloves, minced
- ½ cup plain nonfat Greek yogurt
- ¼ cup crumbled fat free feta cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon chopped fresh dill
Directions
1. Preheat 9-quart air fryer to 400°F for 5 minutes. Cut potatoes from kit into quarters; toss with pepper, onion, 2 tablespoons oil, vegetables from kit and ½ the seasoning packet from kit in a large bowl.
2. Brush chicken with remaining 1 tablespoon oil; sprinkle with remaining ½ the seasoning packet from kit. Place chicken, in 2 batches, on 1 side of air fryer basket and air fry 20 minutes or until internal temperaturereaches 165°F; place vegetables in air fryer basket on opposite side of chicken and air fry 25 minutes or until vegetables are tender-crisp. Makes about 5 cups vegetables.
3. Whisk garlic, yogurt, cheese, lemon juice and dill in a medium bowl. Makes about 2/3 cup Feta Yogurt.
4. Serve chicken and vegetables with Feta Yogurt.
