Air Fryer Buffalo Cauliflower Bite Salad
Ingredients
- 1 cup white whole wheat flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 5 eggs
- 2 3/4 cups whole wheat panko breadcrumbs
- 1 medium head DOLE® Cauliflower, cut into florets
- Nonstick cooking spray
- 1/2 cup cayenne pepper hot sauce
- 1/4 cup natural buttery spread with olive oil, melted
- 1 package (12.1 ounces) DOLE® Chopped Buffalo Ranch Kit™
Directions
- Preheat oven to 300°F. Line rimmed baking pan with parchment paper. Whisk flour, salt and pepper in a wide, shallow dish. Whisk eggs in a separate wide, shallow dish; place breadcrumbs in a third wide, shallow dish. Dredge cauliflower in flour mixture, shaking off excess, then dip in eggs and breadcrumbs to coat; place on prepared pan.
- Preheat a 3-quart or larger air fryer to 400°F for 5 minutes; spray cauliflower with nonstick cooking spray. Air fry cauliflower, in 3 batches, 5 minutes or until golden brown and crisp, turning once; transfer to rimmed baking pan and keep warm in oven. Makes about 40 bites.
- Whisk hot sauce and buttery spread in a large bowl; add cauliflower and toss. Prepare Chopped Kit as package directs in a large bowl. Makes about 3 cups.
- Serve bites over Chopped Kit.
