It’s that time of year again – the holiday season! And what better way to celebrate than with freshly baked cookies? First, you’ll need to gather a few simple ingredients – flaxseed meal, almond flour, baking soda, salt, very ripe DOLEÒ Bananas, vanilla extract, gluten-free vegan dark chocolate chips, chopped roasted, unsalted cashews, and sliced almonds. Preheat your oven to 350°F, and line two rimmed baking pans with parchment paper.

 

Next, stir together the flaxseed meal and water in a small bowl, let it stand for five minutes. Then, whisk together the almond flour, baking soda, and salt in a medium bowl. In a large bowl, mash the bananas with a fork, then stir in the vanilla extract and flaxseed mixture. Add the flour mixture to the banana mixture, and fold in the chocolate chips, cashews, and almonds.

 

Now comes the fun part: drop spoonfuls of the dough onto the prepared baking pans, about two inches apart. Press down gently on each ball of dough to flatten it to about a half-inch thickness. Bake the cookies for 20 minutes or until they are lightly browned, rotating the pans once halfway through baking. Cool them on the pans for five minutes, then transfer them to a wire rack to cool completely. This recipe should make about 18 cookies.
