Multi-coloured sweet potato toast: bread with a twist
Bread is so yesterday – today we are toasting sweet potatoes! Cut into slices and topped with fresh fruit, this delicious and healthy tuber, which is brimful of valuable beta-carotene, vitamin E and potassium, can quickly be made into multi-coloured sweet potato toast. It is the perfect substitute for bread, and makes a tasty breakfast or snack in between meals.
Ingredients
- 2 sweet potatoes
- 3 tablespoons cottage cheese
- Handful of blueberries
- Handful of grapes
- 1 orange
- Poppy seeds, walnuts and dessicated coconut to garnish
Directions
- Preheat the (fan-assisted) oven to 180°C. Peel the sweet potatoes and cut them into equal pieces, approx. 0.5 cm thick.
- Place the sweet potato slices on a baking sheet and bake them in the oven for 5 to 10 minutes.
- Allow to cool and top with a colourful mix of cottage cheese, fruit, seeds and nuts.
