Grapefruit and chia pudding with berries

¡Hola chia! Chia pudding has long taken the hearts of open-minded foodies by storm. It’s not surprising, as this delicious treat can be conjured up quickly and will keep you feeling full for longer. In this recipe, the tiny grains are transformed, together with berries and grapefruit, into an exotic, premium breakfast experience.

Ingredients

60 g chia seeds

300 ml grape juice

500 ml freshly squeezed grapefruit juice

4 tbsp rice syrup

1 sachet of vanilla pudding powder

350 g mixed berries (e.g. raspberries, blueberries, strawberries)

2 grapefruit

 

Lemon balm leaves and edible flowers to decorate

Directions

To make the chia pudding: Mix the chia seeds with 200 ml grape juice and leave to swell for 2 hours. Stir in the rest of the grape juice.

 

To make the grapefruit pudding: Bring 450 ml grapefruit juice and the rice syrup to the boil. Whisk the remaining 50 ml grapefruit juice and the vanilla pudding powder together and stir into the boiling grapefruit juice and rice syrup mixture. Bring to the boil briefly once again and pour the mixture into a bowl.

 

Wash the mixed berries. Peel and slice the 2 grapefruit.

 

Divide the chia and grapefruit pudding between the 4 bowls and leave to set. Decorate with the grapefruit slices, mixed berries and lemon balm leaves. Sprinkle with edible flowers to taste. And voilà your grapefruit and chia pudding with berries is ready!
