Grilled shrimp with blackberries
Summertime – that means time for light meals like this delicious grilled shrimp salad. It is fresh and healthy and a guaranteed highlight for every barbecue! Add salt if necessary. Set aside ⅓ cup of the citrus-ginger marinade to serve with the salad.
Ingredients
- 16 jumbo shrimp, peeled and deveined
- 1 gramme salad (we prefere a mix of green salat with carrots)
- 1 cup cooked black beans
- 2 cups Blackberries
- 3 tablespoons sunflower seeds
- Citrus-Ginger Marinade (recipe below)
- 8 wooden skewers

Marinade
Combine 2 tablespoons lime juice, 2 tablespoons olive oil, 1-½ tablespoons honey, 1 tablespoons chopped onions, 1 tablespoon water, 1 tablespoon grated lime peel, 1 teaspoon grated fresh ginger and ½ teaspoon minced garlic.Grilled shrimp
- Press 2 shrimps onto 8 skewers. Pour marinade over shrimp and set aside while preparing grill (about 20 minutes).
- Grill shrimps for 1-½ minutes per side.
- Toss together greens, blackberries and black beans. Divide between four serving plates. Brush reserved marinade over salad and arrange two skewers on top of each salad plate. Garnish with sunflower seeds.
