Cauliflower, broccoli and pineapple salad
You don’t always need the saucepan to put together a healthy snack. Many types of vegetables, such as cauliflower and broccoli, can also be eaten raw, retaining the valuable vitamins, iron and calcium. So what delicious meal can be conjured up using these popular members of the cabbage family? Quite simply – a quick salad that tastes wonderfully aromatic and fresh thanks to the addition of pineapple and spinach. The secret ingredient is the sophisticated sesame and ginger dressing!
Ingredients
- 325 grammes cauliflower florets, sliced
- 180 grammes broccoli florets, sliced
- 150 grammes pineapple, sliced thinly
- 150 grammes fresh spinach leaves
- 2 teaspoons black sesame seeds
Sesame and ginger dressing
- 3 tablespoons spring onions, chopped
- 2 tablespoons coriander, chopped
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon freshly grated ginger
- 1 tablespoon honey
- 1 teaspoon water
- 1 teaspoon chopped garlic
