Grilled skewered summer vegetables with smoked tofu
Barbecue season begins! Those who want to have a vegetarian barbecue should try this delicious recipe for grilled skewered summer vegetables. It is a perfect healthy alternative to common barbecue dishes.
Ingredients
- 180 grammes brussels sprouts, cut in half
- 180 grammes cauliflower florets
- 180 grammes broccoli florets
- 400 grammes cubed smoked tofu or seitan
- 1 head romaine lettuce
- 150 grammes cherry tomatoes
- wooden skewers
Marinade
- 3 tablespoons olive oil
- 2 tablespoons grated fresh ginger
- 2 tablespoons orange juice
- 2 tablespoons orange marmalade
- 2 tablespoons chopped cilantro
- 1 teaspoon grated orange peel
- ½ teaspoon red pepper flakes
Directions
- Blanch brussels sprouts, cauliflower and broccoli. Thread tofu on skewers alternating with blanched vegetables and cherry tomatoes.
- For the marinade whisk together all the ingredients and place the vegetable skewers in marinade.
- Cut romaine lettuce into four pieces. Wrap the romaine pieces with kitchen string and add to the marinade.
- Preheat the grill to medium high. Grill the skewers and the lettuce for 3 minutes per side, brushing them with the remaining marinade from time to time.
