Tropical Turkey Chili
Ingredients
- 1 tablespoon olive oil
- 1 DOLE® Red Onion, halved and chopped
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 teaspoons minced garlic
- 1½ pounds lean ground turkey
- 1 cup grated DOLE® Cauliflower
- 1 can (28 ounces) diced tomatoes in sauce
- 1 cup low sodium chicken broth
- 4 cups DOLE® Baby Spinach
- Chopped DOLE® Tropical Gold® Pineapple, chopped DOLE® Avocado and/or sliced DOLE® Green Onions for garnish (optional)
Directions
1. Heat oil in a large saucepot over medium heat. Add red onion; cook 5 minutes, stirring occasionally. Add chili powder, cumin and garlic; cook 1 minute or until fragrant, stirring frequently. Add turkey and cauliflower; cook 5 minutes or until turkey is browned, breaking up turkey with side of spoon. Add tomatoes with their juice and broth; heat to a simmer over medium-high heat. Reduce heat to medium-low; simmer 25 minutes, stirring occasionally. Fold in spinach.
2. Serve chili garnished with pineapple, avocado and/or green onions, if desired.
