Spicy Cucumber & Avocado Rolls
Ingredients
- 2½ cups warm cooked microwaveable sticky rice
- 2 tablespoons rice vinegar
- 2 teaspoons granulated sugar
- 2 tablespoons less-sodium soy sauce
- 1 tablespoon fat free mayonnaise
- 1 teaspoon prepared wasabi
- 4 sheets sushi nori
- 1 DOLE® Avocado, peeled, pitted and thinly sliced
- 1 cup DOLE® Colorful Coleslaw
- ⅓ cup finely chopped English cucumber
Directions
- Toss rice, vinegar and sugar in a medium bowl. Whisk soy sauce, mayonnaise and wasabi in a separate medium bowl.
- Wrap bamboo sushi mat with plastic wrap; place horizontally on work surface. Place 1 sheet nori, lengthwise and shiny side down, on mat; gently brush top and bottom edges with water. Spread about ⅔ cup rice mixture lengthwise into 8 x 5-inch rectangle over nori; place ¼ of each the avocado, coleslaw, cucumber and soy sauce mixture lengthwise down center. Starting from long end, use mat to tightly roll nori and rice mixture around filling. Repeat with remaining nori, rice mixture and fillings to make 3 more rolls.
- Cut each roll crosswise into ¾-inch-thick slices.
