Pineapple, Plantain & Sweet Potato Smoothie
Ingredients
- 1 medium DOLE® Sweet Potato, peeled and cut into 1½ – inch pieces
- 1 yellow-black DOLE® Plantain, peeled, coarsely chopped and frozen (about 1 cup)
- 2½ cups gluten free oat milk
- 2 cups chopped DOLE® Pineapple, frozen plus additional for garnish (optional)
- 1 tablespoon chia seeds plus additional for garnish (optional)
- 1 tablespoon honey
Directions
- Heat a medium sauce pot of water to a boil over high heat; add potato and cook 10 minutes or until very tender. Drain potato; cool.
- Purée all ingredients in a blender on high until smooth; serve garnished with pineapple and chia seeds, if desired. Makes about 6 cups.
