Everything Bagel Chicken Roll-Ups
Ingredients
- Nonstick cooking spray
- 2 DOLE® Green Onions, thinly sliced
- 1/3 cup fat-free cream cheese, softened
- 2 tablespoons dried minced garlic
- 2 tablespoons dried minced onion
- 1 tablespoon plus 1 teaspoon poppy seeds
- 1 tablespoon plus 1 teaspoon sesame seeds
- ½ teaspoon salt
- 2 large egg whites
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1 cup DOLE® Baby Spinach
Directions
- Preheat oven to 425°F. Spray rimmed baking pan with nonstick cooking spray. Stir green onions and cream cheese in a small bowl. Stir garlic, dried onion, poppy seeds, sesame seeds, and salt in a wide, shallow dish; whisk egg whites in a wide, shallow bowl.
- Slice each chicken breast horizontally in half, but do not cut all the way through. Open chicken breasts; lay flat between plastic wrap on cutting board. Pound chicken to 1/2-inch thickness with flat end of meat mallet. Spread cheese mixture over chicken breasts; top with spinach. Roll chicken around filling to enclose. Roll chicken breasts in egg whites, then press lightly into garlic mixture to cover; place, seam side down, on prepared pan.
- Bake 25 minutes or until internal temperature of chicken and filling reaches 165°F.
