Easter Bunny Sandwiches
Ingredients
- 1/4 cup fat-free cream cheese, softened
- 3 tablespoons finely minced DOLE® Carrot
- 2 tablespoons finely minced red bell pepper
- 2 teaspoons chopped fresh chives
- 1/2 teaspoon salt-free garlic & herb seasoning
- 8 slices 100% whole wheat bread
- 1/2 cup DOLE® Butter Bliss™
- 1/3 cup thinly sliced cucumber
Directions
- Stir cream cheese, carrot, pepper, chives, and garlic & herb seasoning in a medium bowl. Makes about 1/2 cup.
- Cut 2 Easter bunnies from each slice of bread with a 2-inch bunny cookie cutter. Spread cheese mixture onto 8 bunnies; top with Butter Bliss, cucumber, and remaining 8 bunnies. Makes 8 sandwiches.
