Cup Salads with Parmesan Straws
Talk about a showstopper. Elegant straws of savory Parmesan tower over colorful cups of crunchy romaine, cherry tomatoes, hearty white mushrooms and sweet, juicy oranges in this no-fuss, all-glamour salad that’ll be sure to shine as your opening act.
Ingredients
- 1 cup cherry tomatoes, cut in quarters
- 1/2 small red onion, sliced into thin rings
- 4 large white mushrooms, peeled and thinly sliced
- 1 large navel orange, peeled and sectioned
- 1 package DOLE® Endless Summer Kit
- 1 cup grated Parmesan cheese
- 1 tablespoon parsley, finely chopped
Directions
- To prepare Parmesan straws: In 12-inch, non-stick skillet over medium-high heat, sprinkle 1 tablespoon of the Parmesan on the bottom of the pan. As it starts to melt, use a spatula to form it into three, 3-by-5-inch strips. When the cheese starts to bubble and turn golden brown, sprinkle with a pinch of chopped parsley. Remove pan from the heat. Let cool for 4 to 5 minutes. The rectangles should be pliable. Pick up one end of a strip with a pair of tongs and roll the piece to form a straw. Repeat the entire process with the remaining cheese. Set aside on a plate.
- To prepare salad: In a large bowl, combine all salad kit ingredients and toss well. Transfer to 4 or more glass cups.
- Insert one Parmesan straw into each glass.
