Chia Breaded Chicken Breast
Scrumptious chicken breast sure to please.
Ingredients
- 3/4 cup Italian-seasoned bread crumbs
- 1/2 cup chia seeds
- 1/4 cup shredded Parmesan cheese
- 1 tablespoon dried parsley flakes
- 1/2 teaspoon salt
- 4 boneless skinless chicken breasts (about 1 pound total)
- 1 pkg. (10 oz.) DOLE® Italian Blend Salad
- 2 tablespoons olive oil
- balsamic vinegar, as needed
Directions
- COMBINE bread crumbs, chia seeds, Parmesan cheese, parsley flakes and salt in large bowl. Rinse chicken breasts under water; dry slightly, leaving some moisture for breading to adhere.
- DREDGE the chicken breasts in the breading mixture; arrange on a foil-lined sheet pan. Bake at 375°F 25 minutes or until chicken is no longer pink in center (165°F).
- SERVE sliced chicken breasts over DOLE® Italian Blend Salad and top with olive oil and balsamic vinegar.
