Celery, Snap Pea and Spring Mix Salad with Buttermilk Dressing

Ingredients
- 1 pkg. (5 oz.) DOLE® Spring Mix
- 1 cup snap peas
- 1 cup chopped DOLE® Celery Hearts
- 1 cup chopped DOLE® Carrots
- 1/2 cup sliced DOLE® Red Onion
- 4 medium DOLE® White Mushrooms, sliced
- Buttermilk dressing (recipe below)
- 1 cup croutons
Directions
- Combine salad blend, snap peas, celery, carrots, onion and mushrooms in large bowl.
- Toss with Buttermilk Dressing, to taste.
- Top with croutons.
Buttermilk-Dressing: Whisk together 1/2 cup lowfat buttermilk, 1/4 cup light mayonnaise, 1 tablespoon chopped fresh parsley, 1 teaspoon chopped fresh chives, 1 teaspoon chopped fresh dill, 1 teaspoon lemon juice, 1/2 teaspoon salt, 1/4 teaspoon ground mustard, 1/8 teaspoon paprika and ground black pepper, to taste, until blended. Makes about 3/4 cup.
