Cabbage Soup
A filling vegetable soup.
Ingredients
- 2 teaspoons olive oil
- 1 small head green cabbage (about 3 pounds)
- 1/2 large DOLE® Onion, finely chopped (about 1 cup)
- 1 1/2 teaspoons salt
- 4 DOLE Red Potatoes, coarsely chopped (about 1 pound)
- 3 small DOLE Carrots, coarsely chopped (about 1 cup)
- 5 cups water
- 1 can (14 ounces) crushed tomatoes
- 1 tablespoon dried dill
Directions
- Heat the olive oil in a large stockpot over medium-high heat. Add the cabbage, onion and salt. Cook, stirring regularly, for about 5 minutes until the vegetables begin to soften. Add the carrots, potatoes, water, tomatoes and dill. Bring mixture to a boil, reduce heat to low and cover. Simmer for 30 minutes until vegetables are tender.
