Bobby Banana Lunch
Ingredients
- ⅓ cup DOLE® Blackberries
- ⅓ cup DOLE® quartered strawberries
- ⅓ cup DOLE® Raspberries
- 8 slices whole grain bread
- 8 slices lower sodium turkey deli slices
- 4 slices provolone cheese plus additional for Bobby Bananas arms and sneakers (optional)
- Bobby Banana paper face cutout (optional)
- 2 medium DOLE® Bananas, trimmed and halved crosswise
- Mini red and yellow sweet peppers for Bobby Bananas sneakers (optional)
- Nori for Bobby Banana sneakers (optional)
- 4 (3-compartment) bento-style lunch boxes
- ½ cup hummus
Directions
1. Toss blackberries, strawberries and raspberries in a medium bowl. Makes about 1 cup.
2. Top 4 slices of bread with turkey, cheese and remaining 4 slices of bread. Makes 4 sandwiches.
3. Tape Bobby Bananas face onto each banana, if desired. With sharp paring knife, cut cheese into Bobby Banana’s “arms” and “sneaker” designs, if desired; cut ovals from red peppers to create “sneakers” and cut bow shapes from yellow peppers to create “laces”, if desired. Cut 4 very thin strips nori and 12 very thin strips nori for “sneaker” designs, if desired.
4. Fill lunch boxes by dividing hummus into 1 compartment, mixed berries into 1 compartment and sandwiches into remaining compartment. Place bananas on top of sandwiches; place “arms” next to banana, “sneakers” on top of hummus and “laces” on top of “sneakers”, if desired. Cover lunch boxes with lids; refrigerate up to 2 days.
