BBQ Ranch Taco Bites
Ingredients
- 8-ounce boneless, skinless chicken breasts
- 2 DOLE® Peaches, sliced into thin wedges
- 1 tablespoon olive oil
- 2 teaspoons lime juice
- 1 teaspoon chili powder
- Salt to taste
- 1 pkg. DOLE Chopped BBQ Ranch Salad Kit
- 24 3-inch or 8 6-inch taco shells
Directions
- Cut chicken into thin slices. Toss with peaches, olive oil, lime juice, chili powder and salt. Sauté in hot skillet until thoroughly cooked, about 4 minutes. Set aside.
- Toss together ingredients from salad kit. Combine salad with chicken and peaches and spoon into taco shells and serve.
