Banana Bran Breakfast Muffins

Ingredients
- 2 extra-ripe, medium DOLE® Bananas, peeled
- 3/4 cup 100% bran cereal
- 1/2 cup skim milk
- 1 egg(s)
- 1/4 cup light molasses
- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup DOLE Raisins
Directions
- Preheat oven to 375F. Line a 12-cup muffin pan with paper liners.
- Slice bananas into blender. Cover; blend until smooth (1 cup). Soften bran cereal in milk. Combine bananas, egg, molasses and oil until blended.
- Combine flour, soda and salt. Stir flour and moistened bran mixture into banana mixture until just moistened. Fold in raisins. Spoon into prepared pan.
- Bake 15 to 17 minutes or until a wooden skewer inserted in center comes out clean. Serve warm.
