Olaf Carrot Smoothie Bowl
Ingredients
- 2 tablespoons unsweetened coconut flakes
- 3 ripe DOLE® Bananas, peeled, 2 cut crosswise into thirds and frozen, 1 thinly sliced crosswise
- 2 DOLE® Carrots, chopped
- 1 cup chopped DOLE® Pineapple, frozen
- ½ cup fresh orange juice
- ½ cup unsweetened coconut water
- ¼ cup chopped whole roasted unsalted almonds
- ½ teaspoon chia seeds
Directions
- Toast coconut in a large skillet over medium-high heat 2 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.
- Purée frozen bananas, carrots, pineapple, orange juice and coconut water in a blender on high until smooth. Makes about 5 cups.
- Divide banana mixture into 4 bowls; top with almonds, chia seeds, toasted coconut and sliced banana.
Tips & tricks
Peel and freeze ripe bananas to have on hand for using in this recipe as well as other smoothies and baking.
