Turkey and Swiss Pita Pockets with Sunflower Ranch Salad A quick and easy lunch, both fresh and delicious. Also nutritious.
4 pita bread,
1/3 cup lite ranch dressing,
4 oz. light Swiss or Jarlsberg cheese, slices cut in 1/2,
8 oz. deli turkey, sliced,
8 cucumber slices,
8 strawberry tomatoes, halved,
3 cups DOLE® Greener Selection®,
2 tablespoons sesame seed,
Step 1: Cut pita breads in half, and gently pry open the pockets using fingers or small knife.
Step 2: Spread about 1 teaspoon dressing into each pita half. Fill each pita pocket with equal amounts of cheese and turkey. Add 1 cucumber slice and 2 tomato halves to each pocket.
Step 3: Stuff pockets with salad blend and drizzle with remaining dressing. Sprinkle with sesame seeds.
