Spinach and Radicchio Bruschetta

Ingredients

1 tablespoon olive or vegetable oil
3 to 5  garlic clove(s), minced
1 pkg. (6 oz.) DOLE® Baby Spinach or Spinach and Leaf Salad Blends
3 cups (2 large) fresh tomatoes, diced
1/4 cup chopped fresh basil
  salt and pepper to taste
1 small baguette loaf, sliced diagonally 1/2-inch thick and toasted
1/3 cup Parmesan cheese, shredded

Steps

STEP1
Ingredients

1 tablespoon olive or vegetable oil
3 to 4 cloves garlic, minced
1 package (6 oz.) DOLE® Baby Spinach or Spinach and Leaf Salad Blends
3 cups diced fresh tomatoes (2 large)
1/4 cup fresh chopped basil

Direction

Heat oil in medium skillet; cook garlic for 1 minute over medium-high heat. Add  spinach, tomatoes and basil; toss well to combine.

Reduce heat to medium-low; cover and steam for 2 minutes, or until spinach is wilted. Remove from heat.

Salt and pepper to taste
1 small baguette loaf, sliced diagonally 1/2-inch thick and toasted
1/3 cup shredded Parmesan cheese

Direction

Season mixture to taste with salt and pepper. Spoon 1 tablespoon mixture onto each bread slice. Sprinkle each with some of the Parmesan cheese; serve warm.
