Pineapple Shrimp Ceviche Recipe featured at Tortilla Jo's Restaurant at Downtown Disney, California. Mexican shrimp marinated in lime juice with red onions, tomatoes, cilantro, and dole pineapple. Served with avocado, lime Tapatio salsa and corn tortilla chips.
2 pounds shrimp, peeled and deveined,
4 cups lime juice,
4 cups DOLE® Chef-Ready Cuts Pineapple Cubes, partially thawed,
1 DOLE Red Onion, diced,
2 cups roma tomatoes, diced,
6 jalapeno chiles, diced,
2 cucumbers, diced,
3 tablespoons fresh mint, chopped,
3 tablespoons fresh cilantro, chopped,
salt and pepper, to taste,
Step 1: In a mixing bowl, add shrimp and lime juice. Let shrimp marinate for 2 hours.
Step 2: Combine pineapple, onion, tomatoes, jalapeno, cucumber, mint and cilantro in large mixing bowl. When shrimp is finished marinating mix into the vegetables. Season with salt and pepper to taste. Serve with Tapatio and chips.
