Coconut Crusted Chicken and Bananas with Black Bean Salsa

Tropical chicken to satisfy your hunger.

Ingredients 15


2 green tipped DOLE® Bananas, sliced lengthwise and in half
boneless, skinless chicken breasts, thinly pounded
1 cup all-purpose flour
egg(s), beaten
1/4 cup Vanilla ALMOND BREEZE® Almondmilk
2 cups Panko bread crumbs
1 cup shredded coconut
  oil for frying
1 ripe DOLE Banana, peeled and diced
1/2 cup black beans
1/4 cup chopped red onion
2 tablespoons chopped jalapeno
2 tablespoons chopped cilantro
lime, juiced
pinch of  salt and sugar




Preheat oven to 375°F.  Line sheet pan with aluminum foil.


1 cup all-purpose flour
2 eggs beaten
1/4 cup Vanilla ALMOND BREEZE® Almondmilk
2 cups panko bread crumbs
1 cup shredded coconut


Place flour in a large shallow plate.  Combine eggs and almond milk, and place in a second large shallow plate.  Combine panko and coconut and place in a third large shallow plate.  Set plates on counter for dredging station.


2 green tipped DOLE® Bananas, sliced lengthwise and in half
4 boneless, skinless chicken breasts, thinly pounded


Coat bananas first with flour, then eggs, then coat with panko coconut mixture.  Then repeat process with chicken breasts.  Place on sheet pan and set aside for frying. 


Oil for frying


Heat about 2-inches of oil in large shallow braising pan.  Fry bananas first until golden brown on each side, about 2 to 3 minutes.  Then add chicken breasts and cook until golden brown on each side, about 5 to 7 minutes for the chicken. Drain on paper towels. 



Finish chicken in the oven, until no longer pink in the center, about 10 to 12 minutes more.   


1 ripe DOLE Banana, diced
1/2 cup black beans
1/4 cup chopped red onion
2 Tbsp. chopped jalapeno
2 Tbsp. chopped cilantro
1 lime, juiced
Pinch of salt and sugar


Combine additional banana, black beans, red onion, jalapeno, cilantro, lime juice, salt and sugar.  Serve over chicken and bananas.
