4 ciabatta rolls or other sandwich rolls, sliced horizontally1 to 1-1/4 cups marinara sauce8 oz. sliced mozzarella cheese2 cups DOLE® Arugula1 tbsp. extra-virgin olive oilKosher salt and ground black pepper, to taste
Preheat oven to 400°F.
Arrange rolls cut-side up on large baking sheet.
Spread 2 tablespoons marinara sauce on top and bottom halves of rolls. Evenly divide cheese on bottom halves of rolls; top cheese with arugula. Drizzle with olive oil; season with salt and pepper, to taste.
Bake 8 to 10 minutes or until heated through. Cover arugula with tops of rolls. Cut sandwiches, diagonally, in half.
