Simple, tasty cheese and arugula pizza sandwiches.

Ingredients 6


ciabatta rolls, sliced horizontally
1 to 1-1/4 cups marinara sauce
8 oz. mozzarella cheese, sliced
2 cups DOLE® Arugula
1 tbsp. extra virgin olive oil
  kosher salt and ground black pepper, to taste



4 ciabatta rolls or other sandwich rolls, sliced horizontally
1 to 1-1/4 cups marinara sauce
8 oz. sliced mozzarella cheese
2 cups DOLE® Arugula
1 tbsp. extra-virgin olive oil
Kosher salt and ground black pepper, to taste


Preheat oven to 400°F.



Arrange rolls cut-side up on large baking sheet.



Spread 2 tablespoons marinara sauce on top and bottom halves of rolls. Evenly divide cheese on bottom halves of rolls; top cheese with arugula. Drizzle with olive oil; season with salt and pepper, to taste.



Bake 8 to 10 minutes or until heated through. Cover arugula with tops of rolls. Cut sandwiches, diagonally, in half.
