Cheese and Arugula Pizza Sandwiches Simple, tasty cheese and arugula pizza sandwiches.
4 ciabatta rolls, sliced horizontally,
1 to 1-1/4 cups marinara sauce,
8 oz. mozzarella cheese, sliced,
2 cups DOLE® Arugula,
1 tbsp. extra virgin olive oil,
kosher salt and ground black pepper, to taste,
Step 1: Preheat oven to 400°F.
Step 2: Arrange rolls cut-side up on large baking sheet.
Step 3: Spread 2 tablespoons marinara sauce on top and bottom halves of rolls. Evenly divide cheese on bottom halves of rolls; top cheese with arugula. Drizzle with olive oil; season with salt and pepper, to taste.
Step 4: Bake 8 to 10 minutes or until heated through. Cover arugula with tops of rolls. Cut sandwiches, diagonally, in half.
