Caribbean Eggnog Classic eggnog with a Caribbean twist.
2 ripe DOLE® Banana(s), peeled, chunked,
2 egg(s), separated,
3 tbsp. sugar,
2 cups milk,
1/2 cup amber rum,
1/4 cup orange-flavored liqueur,
In a blender, combine bananas, egg yolks, 2 tablespoons sugar, milk, rum and liqueur; whir until well blended. Beat egg whites separately until soft peaks form, gradually adding 1 tablespoon sugar. In a large bowl, stir together eggnog and egg white mixtures; chill until cold. Stir before serving. Top each serving with a sprinkling of nutmeg. Makes about 7 cups.
