• Combine 3 mashed bananas, cake mix, eggs, and oil in medium bowl. Whisk until all ingredients are well incorporated.
• Drop one level tablespoon of batter onto prepared cookie sheets until all batter is used. Bake 12 to 14 minutes or until edges of cookie are brown and no longer look wet. Allow to cool completely.
• Combine remaining mashed banana and dulce de leche in small bowl. Assemble whoopie pies by taking two cookies and filling one side with 1 to 2 teaspoons of dulce de leche mixture. Sandwich the two cookies and dust with powdered sugar, if desired.
