Ingredients 6


DOLE® Sweet Potatoes
egg(s), lightly beaten
3 tbsp sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 extra-ripe, large DOLE Banana(s), peeled




Preheat oven to 375°F.


3 small DOLE Sweet Potatoes (1-1/2 lb)


Pierce sweet potatoes in several places with tip of knife. Bake 50 to 60 minutes or until tender. Cool slightly; peel and cut into chunks.


2 extra-ripe, large DOLE Bananas, mashed slightly
3 eggs, slightly beaten
3 tbsp sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg


Combine sweet potatoes, mashed bananas, eggs, sugar, cinnamon and nutmeg in large bowl; beat until almost smooth. Spoon into 1-1/2 quart casserole or soufflé dish sprayed with nonstick cooking spray.



Bake 35 to 40 minutes or until heated through. Garnish with additional banana slices and parsley, if desired.

Tip: Spoon sweet potato banana mixture into 6 individual custard cups and bake as above.
