Banana Brownies Brownies made with mashed bananas.
3/4 cup butter or margarine, divided,
8 whole graham crackers,
6 extra-ripe, medium DOLE® Bananas, divided,
2 cups sugar,
2 tsp. vanilla extract,
1-1/3 cup all-purpose flour,
3/4 cup baking cocoa,
1 tsp. baking powder,
1 cup chopped walnuts,
Step 1: Preheat oven to 350 F.
Step 2: Melt 1/4 cup butter and put into a 13 x 9-inch pan, tip to coat. Cover bottom of pan with a single layer of whole graham crackers (they may be cut with a serrated knife, if necessary).
Step 3: Mash bananas to make 1 cup, set aside. Thinly slice remaining bananas and arrange on graham crackers. Add to the mashed banana, 1/2 cup melted butter, eggs, sugar and vanilla. Sift in flour, cocoa and baking powder. Stir just to blend. Pour carefully into prepared pan. If desired, sprinkle with walnuts.
Step 4: Bake 30 to 35 minutes or until set in center. Cool, cut into squares or bars.
